It also has many different variations but is basically corn cooked with seasonings and thickeners to create a soft and fluffy casserole that’s a bit sweet and savory at the same time.

Can I double this recipe?

Yes, of course! It’s perfect for serving a crowd. Double all the ingredients and use a 9 x 13 baking dish to cook your casserole.

Can you use cornmeal instead of Jiffy or another cornbread mix?

No, I don’t recommend that substitution. Jiffy mix contains other ingredients including, sugar, salt, baking powder, and flour. If you swap it for cornmeal you will be eliminating all those other ingredients and your corn casserole will not have the right texture.

Leftovers & Storing

  • Make Ahead. You can also make this dish ahead of time and refrigerate before you need to bake, just let it sit at room temperature for at least 30-45 min before baking.
  • Store. Leftovers in the fridge for up to four days or you can freeze it for up to three months.
  • Reheat. Return the leftovers to a sprayed baking dish and heat in a 350° F oven until heated through. You can also heat individual servings in the microwave.

  • ½ cup butter, melted
  • 2 eggs, beaten
  • 1 box dry cornbread mix, 8.5 oz.
  • 1 can whole kernel corn, drained, 15 oz.
  • 1 can creamed corn, 14.75 oz.
  • 1 cup sour cream
  • 4-5 stalks green onions, chopped

Instructions
 

  • Preheat oven to 350°F. Spray a 9 x 9-inch baking dish with non-stick cooking spray. 
  • In a medium bowl, combine butter, eggs, cornbread mix, whole and creamed corn and sour cream.
  • Add green onions and stir. Pour into prepared baking dish. Bake for 50-55 minutes or until the top is golden brown.
