Ingredients

  • Potatoes: I love the tender texture of Yukon baby potatoes and they’re so easy to find in the store. You can make air fried baby potatoes with other types of baby potatoes too.
  • Olive oil: Coating the potatoes in olive oil helps them cook up nice and crispy. You can use another type of oil if you prefer but try to stick with one that has a neutral flavor.
  • Italian seasoning: This blend of herbs including oregano, basil, thyme, marjoram, and rosemary adds great flavor to these crispy baby potatoes.
  • Paprika: Made from dried red peppers paprika adds a sweet almost fruity flavor to foods.
  • Salt and pepper: Brings all the flavors together.
  • Parmesan cheese: Using shredded parmesan cheese adds another layer of crispiness to these potatoes.

  2. Toss the potatoes in a bowl with the olive oil to coat the outside.
  3. Sprinkle the Italian seasoning, paprika, salt, pepper, and parmesan cheese over the top.
  4. Stir well to distribute the seasoning throughout the potatoes.

Tips & Variations

  • Change up the spices! You can try different spice blends or mix and match your favorite spices.
  • Don’t skip shaking the potatoes during cooking. This makes sure all the potatoes cook up crispy.
  • Don’t overcrowd your air fryer. Place the potatoes in a mostly single layer so the air can circulate around the potatoes. This means if cooking a double recipe or using a smaller air fryer you may need to cook your potatoes in batches.
  • Make sure your potatoes are similar in size. This means you may need to cut some in half while others may need to be cut in quarters if the potatoes are larger.
