Ingredients
- Hash Browns. It’s not a hash brown casserole without it, right? This recipe uses frozen diced hash browns to save time.
- Salt. Potatoes are always better with a bit of salt!
- Onion. Layers in more delicious flavors.
- Creamy Soup. A mixture of cream of chicken and cream of mushroom soup serves as the creamy base for the casserole while piling on the flavors.
- Sour Cream. The sour cream adds a thick and creamy texture that makes this casserole so delicious.
- Milk. Adding in some milk gives this dish the perfect texture and creaminess.
- Cheese. Cheddar cheese is our favorite!
- Corn Flakes. An extra crunchy topping for your cheesy hash browns.
- Butter. It adds richness and flavor to the crunchy cornflake topping. You’ll want to melt your butter and bring it to room temp!
How To Make Hash Brown Casserole with Corn Flakes
- Mix Together. The hash browns, salt, onions, soups, sour cream, milk, and cheese together.
- Pour. The mixture into a baking dish and smooth out the top.
- Mix the Topping. Combine the crushed cornflakes and melted butter in a bowl and toss to coat.
- Sprinkle. The topping evenly across the top of the hash brown mixture. Bake your hash brown casserole in the preheated oven.
Tips & Variations
- Make it Spicy. You can add some green chilies to add a mild level of spiciness and more complex flavors or chop up some fresh jalapenos for a bit more heat.
- Swap Out the Cheese. This hash brown potato recipe will work with just about any type of cheese that melts well. Try it out with Pepper Jack, Monterey Jack, or Colby Cheese for a bit of variation.
- Add Bacon or Sausage. You can easily mix in some crispy bacon or cooked sausage to make it a bit heartier.
- Use Shredded Hash Browns. I prefer the texture you get from using the diced hash browns but this same recipe will also work with shredded.
What To Serve With Hash Brown Casserole
Here are some ideas for serving this dish to help you plan out your menu!
- Dips & Appetizers. When serving a crowd kick things off with some snacks! Ranch Pretzels, Rotel Dip, Crockpot Meatballs, and Taco Pizza are just a few favorites.
- Salads. Try this 7-Layer Salad or Chef Salad for something savory and my Easy Fruit Salad or Fruit Salad with Cool Whip for something a bit sweeter.
- Main Course. This dish works great for breakfast or dinner. Pair it with Cheesy Ranch Chicken, Crockpot Pulled Pork Sandwiches, or Sausage Breakfast Casserole.
- Sides. Serve with a variety of other tasty side dishes such as BBQ Baked Beans, Simple Green Beans, or Air Fryer Asparagus.
- Sweet. Enjoy the addition of something sweet when serving for breakfast. Everyone loves Baked Sprinkled Donuts, Homemade Blueberry Muffins, and Banana Chocolate Chip Pancakes.
Leftovers & Storing
- Make Ahead. Bake the casserole the night before and refrigerate once it has cooled and wrap it in foil. Then you can reheat it in the morning when everyone is ready to eat.
- Store. Leftovers in an airtight container in the fridge for up to four days.
- Reheat. If you’d like to reheat the entire casserole (such as after freezing), bake it in the oven for about 15 minutes. You can also reheat a single serving in the microwave on a microwave-safe plate for about 30-60 seconds.
- Freeze. Freeze the fully baked casserole after it’s cooled in the freezer for up to three months. Make sure to wrap it well in foil. Thaw it out in the fridge overnight and then proceed with reheating when it’s thawed.
