  • Worcestershire sauce: Deepens the umami flavor in the creamy sauce.
  • Cream of mushroom soup: The mushroom flavor works great with the beef but you can use other “cream of soups” in place of it.
  • Dairy: You will need a bit of butter for crisping up the potatoes along with milk and sour cream for the casserole’s creamy sauce. For the best flavor, I highly recommend using the full-fat versions of each.

How To Make Hamburger Hash Brown Casserole

The active time for this meal isn’t much that’s why this hash brown casserole with hamburger is perfect for those nights you need a simple meal you know your family will love!

  1. Crisp up the hashbrowns. Bake them in the oven to “crisp up” a little. But if you don’t have time, you can just throw it all together, your hashbrowns will just be not as crispy.
  2. Cook. The ground beef, onion, onion soup mix, and Worcestershire sauce until the meat is browned. Drain off the excess fat in the pan after cooking the beef.
  3. Combine. The ground beef, cream of mushroom soup, sour cream, milk, ranch seasoning, one cup of pepper jack cheese, one cup of Colby and Monterey cheese, frozen corn, and frozen peas in a large bowl. Mix together until everything is combined.
  4. Add. The ground beef mixture over the top of the crispy hash browns and bake uncovered for 35 minutes. Top with the remaining cheese and bake until the cheese is melted.

Will this hamburger hash brown casserole work as a freezer meal?

Yes, it can! Mix up the casserole as directed and then store it in the freezer until you need it. Allow it to thaw in the fridge overnight. Remove it from the fridge and allow it to sit to remove some of the chill. Then bake according to the last two steps in the recipe card. Since it’s cold you may need to cook it in the oven for 5-10 minutes more.

What do you serve with hamburger casserole?

Most casseroles, like this one, are meant to be a full meal since they often contain a protein, a starch, and vegetables. This hash brown casserole with hamburger is especially hearty and satisfying and in most cases, you might want to simply add an easy vegetable side dish, salad, or bread.

Leftovers & Storing

  • Store. Leftovers in the fridge for up to four days or in the freezer for up to three months. Just be sure to transfer it to an airtight container when it’s fully cooled.
  • Reheat. In the microwave or transfer it to an oven-safe container and heat in a 350° F oven for 20-25 minutes or until heated through.
  • Make Ahead. You can make this hamburger casserole up to a day before and store it in the fridge. When you’re ready to bake it, remove it from the fridge and allow it to sit for 30 minutes on the counter before baking it in the oven. Ingredients
 

  • 1 32 oz. bag frozen CUBED hash browns, thawed
  • 4 Tablespoons butter, melted
  • salt and pepper to taste
  • 2 pounds ground beef
  • 1 cup onion, chopped
  • 1 packet onion soup mix
  • 1 Tablespoon Worcestershire sauce
  • 2 10.5 oz cans cream of mushroom soup
  • ½ cup sour cream
  • ¼ cup milk
  • 1 packet ranch seasoning mix
  • 2 cups shredded pepper jack cheese, divided
  • 2 cups shredded colby/Monterey jack cheese, divided
  • 1 12 oz. bag frozen corn
  • 1 12 oz. bag frozen peas

Instructions
 

  • Preheat oven to 375°F. Spray a 9×13 baking dish with cooking spray.
  • Pour thawed hash browns into the prepared baking dish. Pour melted butter over top of hash browns and mix. Season with salt and pepper to taste. Place hash browns in the oven to “crisp up” a little while you are making the ground beef mixture. About 10 minutes.
  • In a large skillet, cook the ground beef, onion, onion soup mix and worcestershire sauce over medium-high heat until there’s no longer any pink in the beef. Drain excess fat. Let cool for a few minutes.
  • In a large mixing bowl, combine ground beef, cream of mushroom soup, sour cream, milk, ranch seasoning, 1 cup pepper jack cheese, 1 cup colby/Monterey cheese, frozen corn, and frozen peas. Mix until combined.
  • Take the hashbrowns out of the oven and pour the ground beef mixture over the hashbrowns.
  • Bake uncovered for 35 minutes.
  • Remove from oven and sprinkle the top with the remaining pepper jack and colby/monterey cheese. Bake for another 5 minutes or until the cheese is melted. Garnish with chopped green onions.
