Preheat oven to 375°F. Spray a 9x13 baking dish with cooking spray.
Pour thawed hash browns into the prepared baking dish. Pour melted butter over top of hash browns and mix. Season with salt and pepper to taste. Place hash browns in the oven to “crisp up” a little while you are making the ground beef mixture. About 10 minutes.
In a large skillet, cook the ground beef, onion, onion soup mix and worcestershire sauce over medium-high heat until there’s no longer any pink in the beef. Drain excess fat. Let cool for a few minutes.
In a large mixing bowl, combine ground beef, cream of mushroom soup, sour cream, milk, ranch seasoning, 1 cup pepper jack cheese, 1 cup colby/Monterey cheese, frozen corn, and frozen peas. Mix until combined.
Take the hashbrowns out of the oven and pour the ground beef mixture over the hashbrowns.
Bake uncovered for 35 minutes.
Remove from oven and sprinkle the top with the remaining pepper jack and colby/monterey cheese. Bake for another 5 minutes or until the cheese is melted. Garnish with chopped green onions.
Notes
Drain Off the Grease. Beef with a higher amount of fat will have more visible grease after browning. Just be sure to drain it off so it doesn't make the casserole greasy.
Make Sure to Use the Right Hash Browns. This recipe uses small cubes of potatoes rather than shredded hash browns.
Swap the Meat. You can easily replace ground beef with other ground meats such as ground turkey, ground chicken, or even Italian sausage.
Lower in Fat and Calories. You can easily make this lower in fat and calories by using reduced-calorie or fat versions of canned soup, dairy, and cheese. Just keep in mind that this may alter the texture and flavor of the casserole a bit.
