  • Versatile coleslaw! While it’s great with these BBQ pulled pork sliders, it also makes a great side dish for ribs and burgers, and it travels well making it great for picnics and all kinds of summer fun.

Ingredients

Let’s look at the main ingredients you need. Everything is easy to find in the grocery store and some ingredients you may already have in the pantry. Be sure to check the recipe card for the full list of ingredients and quantities.

  • Mayonnaise: Use your favorite brand! I love Hellmann’s!
  • Buttermilk: Adds more tang than using regular whole milk. Make homemade buttermilk with only 2 simple ingredients.
  • Lemon juice: Use freshly squeezed lemon juice for the best flavor.
  • White wine vinegar: This mild vinegar works perfectly for coleslaw. You can also use apple cider vinegar, rice vinegar, or for a bit more bite white vinegar works.
  • Coleslaw mix: Makes this coleslaw recipe so easy since it requires absolutely zero prep.
  • Minced onion: Just a bit for more depth of flavor.

How To Make Coleslaw for Pulled Pork

It takes only five minutes to mix up this vinegar coleslaw! Be sure to allow time to let it sit before you serve it!

  1. Combine. The mayonnaise, buttermilk, lemon juice, vinegar, salt, and pepper together in a bowl.
  2. Whisk. Until the coleslaw dressing is smooth.
  3. Add. The coleslaw mix and onion to a large bowl.
  4. Pour. The mayonnaise mixture over the top of the cole slaw and stir until well combined.
  5. Chill. For at least an hour before serving.

Tips & Variations

  • Make it spicy! Add some diced jalapenos, Sriracha, or cayenne pepper to the coleslaw during mixing.
  • Be sure to let it sit for at least an hour. The cabbage will relax a bit and absorb the dressing making the slaw taste much better.
  • Like a sweeter slaw? Add one to two tablespoons of sugar.
  • Chopping your own cabbage? Using pre-shredded mix really saves time but if you prefer a head of cabbage be sure to slice it into similar-sized pieces.

How much coleslaw per person with pulled pork?

It will depend on what other sides you are serving but generally allow around a half cup to full cup per person.

Storing

  • Store. Leftovers in the fridge for up to two days. It will continue to soften the longer it sits so I recommend trying to use it up within the first couple of days.
  • Freeze. I do not recommend freezing coleslaw.
