  • Rotisserie chicken: Using an already-cooked rotisserie chicken makes this recipe quick and easy to prepare. You can also use three cups of shredded chicken.
  • Mayo: My family loves Hellmann’s but you can use your favorite mayonnaise.
  • Lemon juice: Adds a burst of refreshing brightness that makes this chicken salad recipe unique.
  • Celery: Adds the perfect amount of crunch.
  • Red grapes: Make sure to grab seedless. I like the texture of using red grapes plus they add a bit more interesting color to the chicken salad.

How To Make Chicken Salad with Rotisserie Chicken

  1. Mix together. The mayo, lemon juice, ground pepper, and salt in a medium bowl.

  • Add some apples. Swap the grapes for green apples or use both!
  • Throw in some nuts. Almonds, walnuts, and pecans are all great.
  • Lower in fat. If you’re looking to conserve some calories, swap the mayonnaise for Greek yogurt or low-fat mayonnaise. You can even use a combination of the two. Just note that this swap does change the flavor of the chicken salad a bit.

How long is chicken salad made from rotisserie chicken good for?

Rotisserie chicken will last a similar amount of time as cooked chicken. This does depend on how it’s handled after you buy it from the store. Be sure to immediately shred the chicken and then refrigerate it either on its own or mixed into the salad. It will last three to five days.

Should I remove the skin?

Yes, I find the skin is a bit chewy and doesn’t work well when making chicken salad.

Ingredients
 

  • 1 fully cooked Rotisserie Chicken or 3 cups shredded chicken or 1 pound
  • ½ cup mayo
  • 1 tablespoon lemon juice
  • ½ teaspoon ground pepper
  • ½ teaspoon salt
  • 1 stalk celery, chopped finely
  • 1 cup red grapes, halved
  • ¼ cup red onion, finely diced

Instructions
 

  • Pull the chicken meat from the bones.
