Coleslaw For Pulled Pork

Need an easy coleslaw for pulled pork? This vinegar coleslaw with buttermilk has the right amount of tangy creaminess that makes a great side dish or topping for pulled pork! It takes just minutes to make using only six simple ingredients. It's the perfect side dish for so many meals.

Ingredients

  • ½ cup mayonnaise
  • ½ cup buttermilk
  • 2 ½ tablespoons lemon juice
  • 1 ½ tablespoons white wine vinegar
  • ½ teaspoon salt
  • teaspoon ground black pepper
  • 1 16 oz. package coleslaw mix
  • 2 tablespoons minced onion

Instructions

  • Stir mayonnaise, buttermilk, lemon juice, vinegar, salt, and pepper together in a bowl until smooth.
  • Combine coleslaw mix and onion in a large bowl. Pour the mayonnaise mixture over top and stir until well combined. Chill for 1 hour before serving.

Notes

  • Make it spicy! Add some diced jalapenos, Sriracha, or cayenne pepper to the coleslaw during mixing.
  • Be sure to let it sit for at least an hour. The cabbage will relax a bit and absorb the dressing making the slaw taste much better.
  • Like a sweeter slaw? Add one to two tablespoons of sugar.
  • Chopping your own cabbage? Using pre-shredded mix really saves time but if you prefer a head of cabbage be sure to slice it into similar-sized pieces.
