Ingredients

  • Mayonnaise: My favorite mayonnaise has always been Hellmann’s but you can use your favorite. I do recommend using a high-quality brand of mayonnaise since it’s the main ingredient in garlic aioli.
  • Onion powder and garlic powder: Simple pantry seasonings you likely already have on hand.
  • Fresh garlic: The second most important ingredient in this recipe! Using a combination of fresh and powdered gives it a more intense garlic flavor that’s not too overpowering.
  • Lemon juice: Use freshly squeezed lemon juice for the best flavor.
  • Cayenne pepper: Just a touch to add some zing.
  • Salt and pepper: Brings all the flavors together.

Kitchen Tools

All you need for this quick garlic aioli is a mixing bowl, some measuring spoons and for easy storage a mason jar or container.

How To Make Garlic Aioli

  1. Combine. The mayonnaise, minced garlic, lemon juice, garlic powder, and onion powder in a bowl.
  2. Season. With salt and black pepper.
  3. Mix. Together until fully combined.
  4. Refrigerate. The sauce for at least thirty minutes before serving.

Variations

  • Spicy: You can make it spicier by adding more cayenne pepper, a few dashes of hot pepper sauce, or Sriracha, or add in some chopped jalapeno or chilies.
  • Avocado: Mash up an avocado and add it to the mayonnaise mixture. Alternatively, you can make this a healthier option by swapping half the mayo for a half cup of mashed avocado.
  • Pesto: Add a tablespoon or two of pesto to the mayonnaise mixture and mix it in.

Expert Tips

  • Fresh ingredients matter. Fresh garlic and freshly squeezed lemon juice make this sauce taste the BEST so don’t swap them or leave them out.
  • Give it time. Let it sit for at least thirty minutes (even better overnight) to let all the flavors meld together.
  • Use high-quality mayonnaise. The brand doesn’t matter — it can be your favorite but this isn’t the best dish for using a budget brand.

Frequently Asked Questions

Can I make aioli with roasted garlic?

Sure thing! You can roast your own or buy a jar of roasted garlic and add it to the mayo. It will have a slightly sweeter, softer flavor than the fresh garlic.

What is the difference between aioli and mayonnaise?

Aioli is a fancy name given to flavored mayonnaise. So basically they’re the same thing.
