  • Chicken breasts. Use thawed chicken breasts. If you use frozen, you will have to adjust the cook time.
  • Seasoning. I use a mixture of dried parsley, paprika, onion powder, minced garlic, salt, and pepper, to get that tasty flavor.
  • Cream of chicken soup. Helping to give that creamy texture, cream of chicken soup is the perfect go-to.
  • Rotel. You will love the taste and texture that the Rotel gives this dish. Make sure not to drain the can, you want all the juices.
  • Cheese. Use Colby Jack or Mexican Four shredded cheese. Both work great with the recipe.
  • Sour Cream. A tangy and smooth texture that pairs great with the Rotel. You can use plain greek yogurt as a substitute.
  • Noodles. I used spaghetti noodles but you can always use a different type of noodles if needed.

  • Thaw the chicken. It’s best to use thawed chicken. It gives a better texture when it’s been thawed beforehand.
  • Spray the Crockpot. Spray the crockpot before adding the ingredients. This helps make the cleanup nice and easy at the end.
  • Pre-shredded Cheese. You can easily shred your own cheese, but pre-shredded cheese makes this easy meal even quicker!
  • Noodles. While this makes the perfect spaghetti noodle dish, you can easily use your favorite noodles or noodles you have on hand. Just make sure not to put the noodles in the crockpot with the other ingredients until just before serving.

How To Make The Best Crockpot Chicken Spaghetti

  1. Prepare. Spray the crockpot with cooking spray before adding any ingredients.
  2. Add. Add the chicken breasts to the bottom of the crockpot. They can touch and overlap slightly. Season the chicken with spices and herbs.
  3. Pour. Open the cans of Rotel and evenly pour them over the seasoned chicken. Then pour the cream of chicken on top of the Rotel.
  4. Cook. Add the lid and cook the chicken on low for 4-6 hours. Once the chicken is cooked all the way through remove the chicken and cube or shred it. Add the chicken back into the sauce.
  5. Stir. Add the cheese and sour cream. Stir until a smooth and creamy sauce is formed.
  6. Toss. Toss in the cooked and drained spaghetti noodles to the mixed sauce. Mix until well coated.

Ingredients
 

  • 4 chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoons onion powder

  • 2 10oz cans of Rotel, not drained
  • 2 Tablespoons minced garlic
  • 4 cups of Colby Jack or Mexican Four shredded cheese
  • ½ cup of sour cream
  • 1 16 oz box of spaghetti noodles or penne noodles

Instructions
 

  • Spray a large crockpot with cooking spray.
  • Add chicken breasts to the bottom of the crockpot. Season the chicken with salt, pepper, onion powder, parsley, and paprika.
  • Pour the chicken soup and rotel over the chicken breasts.
  • Cook on low for about 4-6 hours or on high for 3-4 hours.
  • Once the chicken is cooked, remove the chicken and cut it into cubes or you can shred it. Add the chicken back into the crockpot.
  • Stir in the sour cream and shredded cheese.
  • Cook the pasta noodles according to the directions on the package. Add the cooked noodles to the crockpot and stir until it’s all combined.
