Street Corn Dip

Tasty corn mixed with your favorite ingredients like sour cream, feta cheese, and of course topped with Tajin seasoning. The perfect tortilla chip dip.

  • Crowd-pleaser. Street corn dip is for sure a crowd-pleaser! It has been a hit at so many parties and get-togethers. It went perfectly with my Cinco De Mayo spread.
  • Easy to serve. One of my favorite things is how easy it is to serve! Enjoy it with a variety of dippers, such as tortilla chips, crackers, or vegetable sticks.

Ingredients For Street Corn Dip

  • Cream cheese. Make sure to soften the cream cheese before mixing it with the other ingredients. Leave it on the counter for 30 minutes before cooking.
  • Sour cream. Use your favorite brand of sour cream. You can even substitute it for plain Greek yogurt.
  • Garlic. I love the taste of fresh minced garlic. In a pinch, I’ve used garlic powder too!
  • Cheese. The best part about this dip is the cheese of course! I use a combination of pepper jack cheese, and feta cheese (or Cotija Cheese).
  • Corn. It’s best to use canned corn for this recipe. Make sure it’s drained and rinsed before using.
  • Bacon bits. For a little added flavor, bacon bits add a tasty spin to this dip.
  • Cilantro. What’s a Mexican-inspired dish without a little cilantro? If you aren’t a fan of cilantro, you can easily leave it out.
  • Tajin. When you think of street corn, you think of Tajin seasoning. This iconic seasoning is sprinkled on top for looks and taste!
  • Tortilla chips. My favorite thing to dip in this recipe is tortilla chips. I also love dipping vegetables and crackers.

Tips for the Best Results

  • Cotija cheese. This dip calls for Feta because it’s much easier to find. Cotija cheese is a salty, crumbly cheese that adds a unique flavor to the dip. Use Cotija cheese for a more authentic taste.
  • Use a blend of cheeses. Don’t hold back on the cheese! You’ll want both the feta cheese and pepper jack for a full flavor.
  • Diced green chilies. For a spicy kick, add some diced green chilies to the dip. This will add a subtle heat that complements the other flavors in the dip.
  • Let it chill. For the best results, let the dip chill for at least an hour before serving. This will allow the flavors to meld together and the dip to thicken slightly.
  • Lime juice. Add extra flavor by squirting fresh lime juice. It adds a citrusy flavor to the dip. Squeeze fresh lime juice over the dip just before serving for the best flavor.

How To Make The Best Street Corn Dip

  1. Preheat. Prep the oven to 350°F.
  2. Combine. Combine the cream cheese, sour cream, garlic, and 1 cup of pepper jack cheese and mix with an electric hand mixer.
  3. Add. Place the cream cheese mixture into a large mixing bowl and add the remaining cup of pepper jack cheese, corn, bacon bits, feta cheese, and cilantro.
  4. Assemble. Pour the mixture into a 9×13 baking dish. Sprinkle Tajin seasoning on the top for the perfect taste and look.
  5. Bake. Place the baking dish in the oven for 15-20 minutes or until the cheese is bubbly and hot.
  6. Serve. Add fresh cilantro and enjoy with tortilla chips.

What To Serve With Street Corn Dip

This street corn dip makes for a perfect party appetizer. Try pairing it with ranch pretzels, turkey sliders, brownie dessert pizza, and party punch for the perfect party spread.

Leftovers & Storing

  • Store. If you have any leftover dip store it in the refrigerator for 3-4 days. Make sure to transfer it to a smaller, airtight, container or cover the baking dish with plastic wrap.
  • Reheat leftovers. Reheat a small portion in the microwave for about 30 seconds. Or you can reheat the whole dish in the oven at 350°F for about 5-7 minutes or until warm.

  • 2 blocks cream cheese, softened
  • 1 ½ cup sour cream
  • 3 cloves of minced garlic
  • 2 cups shredded pepper jack cheese
  • 2 cans corn, drained and rinsed

  • 4 ounces feta cheese, or Cotija Cheese crumbled
  • ½ cup fresh cilantro, chopped
  • 1 Tablespoon Tajin seasoning
  • Tortilla chips, for dipping

Instructions
