Street Corn Dip

Ingredients

  • 2 blocks cream cheese softened
  • 1 ½ cup sour cream
  • 3 cloves of minced garlic
  • 2 cups shredded pepper jack cheese
  • 2 cans corn drained and rinsed
  • ¼ cup bacon bits
  • 4 ounces feta cheese or Cotija Cheese crumbled
  • ½ cup fresh cilantro chopped
  • 1 Tablespoon Tajin seasoning
  • Tortilla chips for dipping

Instructions

  • Preheat oven to 350°F.
  • Using an electric mixer, combine cream cheese, sour cream, garlic, and 1 cup of pepper jack cheese. Blend until fully combined.
  • Scoop the cream cheese mixture into a large mixing bowl and add the remaining cup of pepper jack cheese, corn, bacon bits, feta cheese, and cilantro. Stir to combine.
  • Pour mixture into a 9x13 baking dish or large serving dish. Sprinkle Tajin seasoning on the top.
  • Bake for 15-20 minutes or until cheese is bubbly and hot. Garnish with fresh cilantro and feta crumbles. Serve with tortilla chips.

Notes

  • Cotija cheese. This dip calls for Feta because it's much easier to find. Cotija cheese is a salty, crumbly cheese that adds a unique flavor to the dip. Use Cotija cheese for a more authentic taste.
  • Use a blend of cheeses. Don't hold back on the cheese! You'll want both the feta cheese and pepper jack for a full flavor.
  • Diced green chilies. For a spicy kick, add some diced green chilies to the dip. This will add a subtle heat that complements the other flavors in the dip.
  • Let it chill. For the best results, let the dip chill for at least an hour before serving. This will allow the flavors to meld together and the dip to thicken slightly.
  • Lime juice. Add extra flavor by squirting fresh lime juice. It adds a citrusy flavor to the dip. Squeeze fresh lime juice over the dip just before serving for the best flavor.
