Strawberry Chocolate Chip Cookie Recipe
Nothing really beats the combination of sweet, juicy strawberries and gooey chocolate! This is one of my absolute favorite dessert recipes because it takes everything you love about chocolate covered strawberries and turns it into the most perfect cookie.
I’ve made batches of these easy cookies on Valentine’s Day, for summer block parties, and to enjoy at ladies night. Every single time I serve them, they’re a massive hit! Nobody can seem to get enough of these cookies, and it’s easy to see why. Homemade chocolate chips are always a crowd pleaser, and they only get tastier with fresh strawberries!
These unique cookies are made with my all time favorite Chocolate Chip Cookie recipe. It’s a super simple tried and true cookie recipe that I can always depend on to give me the best classic cookies, every time! When that batter is mixed with fresh strawberries, it’s truly magical. Oh, and don’t forget to add a little extra milk chocolate chips – because why not?!
Strawberry Chocolate Chip Cookies Ingredients
ALL-PURPOSE FLOUR: 2 1/4 cups all-purpose flour
BAKING SODA: 1 tsp baking soda
SALT: 1/2 tsp salt
UNSALTED BUTTER: 12 tbsp unsalted butter, softened
SUGAR: 1/2 cup white granulated sugar
LIGHT BROWN SUGAR: 3/4 cup light brown sugar, packed
VANILLA EXTRACT: 1 tbsp vanilla extract
EGGS: 1 large eggs
STRAWBERRIES: 1/2 cup fresh strawberries, chopped into small pieces
CHOCOLATE CHIPS: 1 cup milk chocolate chips or white chocolate chips, additional chocolate chips for topping
How To Make Strawberry Chocolate Chip Cookies
PREPARE: Preheat oven to 370°F. Then, line two large baking sheets with parchment paper or silicone baking mats. Set aside.
WHISK: Whisk together the flour, baking soda, and salt in a medium size bowl. Set aside.
CREAM: In a large bowl, using an electric or stand mixer, cream together the butter, granulated sugar, light brown sugar, and vanilla extract until combined.
ADD THE EGGS: Add eggs one at a time, mixing between each egg.
MIX IN THE FLOUR: Add flour mixture and mix until just combined. DO NOT OVER MIX!
STIR IN THE BERRIES: Using a spatula, stir in fresh strawberries and chocolate chips until combined.
SCOOP: Using a cookie scoop/ice cream scooper, scoop dough into balls about 2 Tablespoons each and place onto prepared baking sheet.
BAKE: Bake for 10 minutes, rotate baking sheet clockwise and bake for additional 4-5 minutes or until golden brown around the edges.
COOL: Immediately after taking cookies out of the oven, place additional chocolate chips on top of cookies and let cool for 5 minutes on baking sheet before moving them to a wire rack.
Tips for the BEST homemade cookies!
Why did my cookies spread?
With almost all my cookie recipes, I always make sure to remind you to not OVER MIX the cookie dough. Meaning, when you mix the flour mixture into the wet ingredients, only mix them together until just combined…you should still see some flour in your mixing bowl. If you over mix the cookies, they’ll be flat and crunchy instead of round and soft.
How to scoop the perfect cookie?
I always use a 1 tablespoon cookie scoop and each cookie dough ball has 2 scoops of cookie dough, meaning that each cookie dough ball is 2 tablespoons in size. In my opinion, this is the perfect sized cookie! If you don’t have a cookie scoop, you can use an ice cream scooper instead, but you will only need 1 ice cream scoop of cookie dough. Should I chill the cookie dough before baking it?
That’s entirely up to you! When I bake cookies using this easy recipe, they don’t tend to spread when placed in the hot oven. However, it’s never a bad idea to chill the cookie dough for about 30 minutes before scooping and baking if you want to! It’s a good way to make sure the cookies don’t spread out and become thin when heated.
How long will strawberry chocolate chip cookies stay fresh?
In an airtight container at room temperature, these cookies will stay deliciously fresh for up to 3 days! Enjoy reaching for one whenever you feel the need for a sweet treat. Oh, and if you want them to last a little longer, place them in an airtight container in the fridge where they’ll keep fresh for about 5 days.
Can I use other types of berries?
Yes! If you want to get creative, you can substitute the strawberries in this recipe with any other berry of your choice. In fact, mixing 1/4 cup strawberries and 1/4 cup blueberries into this cookie dough would make the cutest red white and blue patriotic treats, especially if you use white chocolate chips.
