Unicorn Banana Bread
Unicorn Banana Bread is one of the happiest recipes you’ll ever make! What do I mean by that?! Well, this sweet, moist banana bread is speckled with sprinkles and drizzled with an easy to make vanilla glaze. It’s sure to make everyone smile and invoke all of the happiest feelings!

I’m glad that the unicorn food trend has stuck around for as long as it has! I mean honestly, I feel like unicorn colors have been popular for so long, it’s no longer a fad/trend – it’s a delicious way of life! In my kitchen, I use more proudly use more sprinkles than the average person. With recipes this pretty (and delicious), why wouldn’t I want to dress up my banana bread in its rainbow best?!
To make this Unicorn Banana Bread, I used my grandma’s famous Banana Bread Recipe but rather than adding walnuts, I added SPRINKLES! I then topped the banana bread with vanilla icing and even more SPRINKLES! If you think that’s excessive, then unicorn recipes might not be for you. Unicorn Banana Bread is the perfect way to start your day, I mean how could you have a bad day when you have SPRINKLES for breakfast! While this is absolutely a kid friendly recipe, I’d be lying if I said I didn’t just make it for myself sometimes. After all, you’re never too grown up to appreciate the delights of a rainbow sprinkled, vanilla glazed slice of homemade banana bread!
Ingredients for Unicorn Banana Bread
UNICORN BREAD:
- BUTTER – 1/2 cup (1 stick) butter, softened
- SUGAR – 1 cup granulated sugar
- EGGS – 2 large eggs, beaten
- BANANAS – 3 ripe bananas, mashed
- FLOUR – 2 cups flour
- BAKING SODA – 1 teaspoon baking soda
- SALT – 1/2 teaspoon salt
- SPRINKLES – 1/2 cup rainbow sprinkles
VANILLA ICING:
- BUTTER – 1/4 cup unsalted butter, softened
- POWDERED SUGAR – 1 cup powdered sugar
- VANILLA – 1/2 teaspoon vanilla extract
- SPRINKLES – sprinkles, for topping
How to Make Unicorn Banana Bread
PREPARE: Preheat oven to 375°F. Spray two 9×5 loaf pan with nonstick spray. Set aside.
CREAM THE BUTTER: In a large bowl, using an electric or stand mixer with paddle attachment cream butter and sugar together until light and fluffy.
BEAT THE EGGS: In a small bowl, beat eggs using a fork. Add eggs to sugar mixture and beat until combined.
ADD BANANAS: Add mashed bananas and mix until combined.
COMBINE THE WET AND DRY INGREDIENTS: Sift all dry ingredients: flour, baking soda, and salt. Slowly add sifted dry ingredients to banana mixture and mix until flour is just combined. DO NOT OVERMIX!
ADD SPRINKLES: Fold in sprinkles.
BAKE: Pour banana bread mixture into prepared loaf pan and bake at 375°F for 15 minutes. REDUCE heat to 350°F and bake for an additional 20-30 minutes or until edges are slightly brown or until toothpick inserted into center comes out clean. Let cool completely before removing from loaf pan.
How to Make the Vanilla Glaze
BEAT THE INGREDIENTS TOGETHER: In a large bowl, beat together the butter with an electric mixer. With the mixer on low speed, add the powdered sugar until smooth and creamy. Beat in the vanilla extract.
ICE IT: Fill a zip-lock bag with vanilla icing, lock it shut and snip off a corner of the bag. Ice top of bread and sprinkle with additional sprinkles.

Tips for the BEST Unicorn Banana Bread
- Make the top of the bread rise perfectly! It’s so easy to do! Bake the banana bread at 375°F for 15 minutes, then I REDUCE the heat to 350°F and bake for an additional 20-30 minutes. Then just let the bread completely cool before removing from loaf pan.
- Don’t let the top burn. Don’t let the top of your bread BURN! About half way through baking this bread, make sure to check and see if the top of the bread is getting too brown. If it is, just place a piece of aluminum foil over top of bread for the rest of the baking time to avoid burning the top of the bread.
How to Make It Ahead of Time
This bread freezes very well for up to 3 months. When ready to enjoy, place bread in refrigerator overnight to thaw. Then place the bread on your kitchen counter top for about 30-60 minutes to allow it to come to room temperature before slicing and enjoying.
