In a medium bowl, mix together mayo, lemon juice, ground pepper, and salt.
Add chicken, celery, grapes, and red onion. Mix until coated.
Serve on croissant rolls.
Notes
Shred your chicken. Right after bringing it home from the store and it's still warm. It's much easier to remove the chicken while it's still warm rather than after it's been refrigerated.
Add some apples. Swap the grapes for green apples or use both!
Throw in some nuts. Almonds, walnuts, and pecans are all great.
Lower in fat. If you're looking to conserve some calories, swap the mayonnaise for Greek yogurt or low-fat mayonnaise. You can even use a combination of the two. Just note that this swap does change the flavor of the chicken salad a bit.
Store. In the fridge for up to three days in an airtight container. Do not freeze rotisserie chicken salad.
