Rotisserie Chicken Salad

In the mood for chicken salad but don’t want to cook? This rotisserie chicken salad recipe is packed with a medley of vibrant colors, crunchy textures, and tantalizing tastes. It’s hands down the best way to make chicken salad.

Ingredients

  • 1 fully cooked Rotisserie Chicken or 3 cups shredded chicken or 1 pound
  • ½ cup mayo
  • 1 tablespoon lemon juice
  • ½ teaspoon ground pepper
  • ½ teaspoon salt
  • 1 stalk celery chopped finely
  • 1 cup red grapes halved
  • ¼ cup red onion finely diced

Instructions

  • Pull the chicken meat from the bones.
  • In a medium bowl, mix together mayo, lemon juice, ground pepper, and salt.
  • Add chicken, celery, grapes, and red onion. Mix until coated.
  • Serve on croissant rolls.

Notes

  • Shred your chicken. Right after bringing it home from the store and it's still warm. It's much easier to remove the chicken while it's still warm rather than after it's been refrigerated.
  • Add some apples. Swap the grapes for green apples or use both!
  • Throw in some nuts. Almonds, walnuts, and pecans are all great.
  • Lower in fat. If you're looking to conserve some calories, swap the mayonnaise for Greek yogurt or low-fat mayonnaise. You can even use a combination of the two. Just note that this swap does change the flavor of the chicken salad a bit.
  • Store. In the fridge for up to three days in an airtight container. Do not freeze rotisserie chicken salad.
