Rotisserie Chicken Caesar Pasta Salad

A delicious combination of romaine lettuce, chopped chicken breast, and penne noodles, all tossed with tasty Caesar dressing and fresh grated parmesan cheese.

  • Under 30 Minutes. This comes together so quickly! Who doesn’t love a hearty salad that you can make in less than 30 minutes?
  • Perfect for a Crowd. This is a big salad and can easily serve a large group of people. It’s also a fan favorite when I bring it to parties.
  • Great for parties. I have made this salad for both a baby shower and a bridal shower and it was a huge hit. You can also add it to any cookout and BBQ spread.
  • Fun combination of flavors. One of my favorite parts of this Cold Pasta Salad recipe is the depth of flavors. The chicken, pasta, vegetables, and cheese make a winning combination.

Ingredients For Chicken Caesar Pasta Salad

  • Pasta. I use penne pasta for this recipe but have also used bow tie or other small noodle pasta that I have on hand.
  • Lettuce. Romaine lettuce pairs great with the other ingredients. It has a great crunch.
  • Chicken breast. Use leftover chicken from dinner the night before, or use shredded rotisserie chicken for easy assembly. Make sure the chicken has been chilled.
  • Croutons. Be sure to use your favorite croutons. My personal favorite is the Texas Toast croutons.
  • Parmesan cheese. Fresh parmesan cheese really ties this whole salad together. Use either grated or sliced cheese.
  • Caesar dressing. My favorite Caesar dressing is Marzetti Caesar dressing but you can use your favorite dressing as well.

Tips for the Best Results

  • Cook Pasta Al Dente: Cook the pasta just until al dente, following the package instructions. This prevents the pasta from becoming mushy when mixed with the other ingredients.
  • Cool the Pasta and Chicken: Allow the pasta and chicken to cool completely before mixing them with the lettuce and dressing. This prevents wilting and ensures a crisp salad.
  • Toss Right Before Serving: Combine the ingredients and dressing just before serving to keep the lettuce crisp and the flavors vibrant.
  • Balance the Dressing: Start with a small amount of dressing and gradually add more, tossing as you go, until the salad is well-coated but not overly saturated.
  • Chill Before Serving: Refrigerate the salad for 15-20 minutes before serving to let the flavors meld and to keep the salad refreshing.

  1. Boil. Boil the pasta in a large pot of water and cook the pasta al dente. Drain the pasta and cool.
  2. Chop. While the pasta cools, cut the Romaine hearts into small pieces.
  3. Add. Add chopped romaine hearts and chicken to the large bowl of pasta.
  4. Toss. Toss the dressing with the other ingredients. Top with the croutons and parmesan cheese.

Leftovers & Storing

  • Store. If you have any leftover cold pasta salad, store it in the refrigerator covered with plastic wrap. The lettuce will begin to wilt so the salad won’t seem as fresh the next day. It’s best eaten the day it is made.

  • 8 oz. Penne pasta
  • 3 Heads Romaine Lettuce
  • 1 cup chopped chicken breast
  • 1 cup croutons
  • ½ cup parmesan cheese, grated or sliced
  • 1 cup Caesar dressing, we like Marzetti Caesar dressing

Instructions
 

  • Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 10 minutes. Drain the pasta and transfer it to a large serving bowl.
  • Cut the Romaine hearts into 1-inch pieces.
  • Add romaine hearts and chicken to the large bowl with the pasta.
  • Add the dressing and toss to combine. Add the croutons and parmesan cheese.
