Cut biscuits into pieces and place in a greased baking dish. Cook and stir sausage over medium-high heat until browned and crumbly.
Scatter sausage over biscuit layer and top with cheese. Whisk eggs, milk, salt, and pepper together and pour over the cheese layer.
Pour gravy over the egg layer. Sprinkle the remaining cheese over the top. Bake for 40 minutes. Serve immediately.
