Preheat oven to 350°F. Spray 8x8-inch loaf pan or square pan with non-stick cooking spray. Set aside.
In a large bowl, mix ground beef, Stove Top stuffing mix, onion mix, parmesan cheese, milk, and eggs together until combined.
Place ground beef mixture into the prepared pan. Do not press the meatloaf into the pan “too much” or the meatloaf will be dense.
Spread a thin layer of BBQ sauce on top on the meatloaf.
Bake for 1 hour.
Notes
Mix Thoroughly. Make sure the ingredients are thoroughly mixed throughout the ground beef.
Bake Just Right. It's important not to over-bake meatloaf! When you over-bake it, it dries out and is not as good.
Don't Skimp On Moisture. The Stove Top Stuffing is a dry mix and will use up a lot of moisture. If you don't use the suggested milk amount, the meatloaf will dry out.
Barbecue Sauce. I used sweet Baby Rays barbecue sauce but you can use homemade BBQ sauce or any other flavor BBQ sauce you love.
Store. Store leftover meatloaf in an air-tight container in the refrigerator for 3-4 days. When ready to eat again, reheat leftovers in the microwave or oven.
Freeze leftovers. This makes a great freezer meal. Place meatloaf in a freezer-friendly container. Store for up to 2 months. Thaw in the fridge and reheat when ready to serve.
