Oatmeal Fudge Bars

It's officially time to start baking lots of fudge again! I made some this year with a little twist - Oatmeal Fudge Bars! They are so easy to whip up and more importantly, they're mouth-watering delicious.

Ingredients

OATMEAL TOPPING:

FUDGE:

  • 1 can sweetened condensed milk 14 ounces
  • 2 cups of semi-sweet or milk chocolate chips
  • 3 tablespoons butter
  • 1 tablespoon vanilla

Instructions

  • Preheat oven to 350F degrees. Spray non-stick cooking spray into a 9x13 inch baking pan. Set aside.
  • In a bowl combine oats, flour, salt, baking soda, butter, brown sugar, eggs and vanilla. Mix until combined.
  • In a saucepan, heat condensed milk, chocolate chips, butter and vanilla. Heat it on the stove until the chocolate chips have melted and stir well until all ingredients are combined.
  • In prepared baking pan, spread 2/3 of the oatmeal mixture into the pan, spreading evenly.
  • Pour fudge topping on the batter. 
  • Top with the remaining oatmeal mixture by dropping small pieces of the dough on top of the fudge, spreading evenly across it.
  • Bake for 20 minutes. DO NOT OVERCOOK!! It will set after cooling.

Notes

  • The best way to soften butter is to pull out your stick of butter about an hour before you plan to bake. However, an easier way when you’re in a hurry or just don’t want to wait is to put the wrapped butter in the microwave for 20 seconds, flipping it every 5 seconds so it gets all sides.
  • If you don’t have a can of sweetened condensed milk you can easily make your own using milk, sugar, butter, and vanilla. You can also use coconut milk if you have it by letting it sit for about half an hour and scraping off the cream that settles to the top and adding some sugar to it.
