Chocolate Sandwich Cookies are easy to make treats that are perfect for the Christmas season! Cake mix cookies are sandwiched together with a fluffy and sweet buttercream frosting. Decorate them with some festive sprinkles to really make them picture perfect!

Preheat the oven to 350 degrees F. Line baking sheets with parchment paper or silicone baking mat.
In a large mixing bowl, using a stand or hand mixer, combine cake mix, oil and eggs; mix well. Add chocolate chips. DO NOT OVERMIX
Drop by rounded teaspoonfuls onto prepared baking sheets.
Place parchment paper over cookie dough balls and use the bottom of a glass to flatten cookies.
Bake at 350 degrees for 6-8 minutes..they might look underdone but they will continue to bake on the baking sheet. Transfer to wire cooling racks. Let cookies cool.
MAKE BUTTERCREAM FILLING:
Using a stand or hand mixer, cream butter until fluffy; add vanilla and salt.
Gradually add powdered sugar and milk; beat until smooth.
FILL COOKIES:
1. You can use a knife or piping bag with a 1 A tip to fill the buttercream between two COMPLETELY COOLED cookies to form a sandwich.
2. Roll cookie sandwiches into a bowl of holiday sprinkles. If the sprinkles are not sticking to the buttercream, just tap them slightly to get them to stick to the filling.
