Instant Pot Hamburger Stroganoff

This Instant Pot Hamburger Stroganoff is easy, creamy and ready in less then 30 minutes.

Ingredients

  • 1 pound ground beef
  • ½ onion chopped
  • 8 oz. fresh sliced baby portabella mushrooms
  • 1 can mushrooms pieces & stems, drained 4 ounces
  • 2 garlic cloves minced
  • 3 Tablespoons cornstarch
  • 2 cups beef broth
  • 1 can cream of mushroom soup 10.75 ounces
  • 1 teaspoon pepper
  • 1 packet dry ranch seasoning mix
  • 12 oz. extra wide egg noodles
  • 1 cup sour cream
  • parsley for topping

Instructions

  • Press the "Saute" button, brown the hamburger, onions, mushrooms and garlic.
  • Stir in cornstarch.
  • Add broth, soup, pepper, and ranch seasoning mix. Stir together.
  • Add noodles.
  • Cover the pot and make sure the vent on the top of the cover is set to "Sealing". Press the "Pressure Cook" or "Manual" button on high pressure. Set timer to 6 minutes. Natural release for 5 minutes and then quick release.
  • Carefully open lid. Stir in sour cream. Serve and top with parsley.

Notes

  • You can also cook the noodles separately. This is what you should do if you want to use gluten-free, whole wheat, etc. Only regular wheat noodles will cook correctly when mixed in.
