These Lemon Coconut Granola Bites are no bake and are the perfect on-the-go breakfast or afternoon snack.

After eating way to many of the amazing Triple Peanut Butter Cookies and all the Easter candy my mom gave us in our Easter baskets, I needed to make something that was a little more healthier! And these Lemon Coconut Granola Bites are the perfect “healthier” treat that are super simple to make.

And aren’t they super cute!?

Easy Granola Bites Recipe by Deliciously Sprinkled

No need to turn on the oven and you only need one bowl to make these granola bites. Yay, less dishes to wash!

The ingredients are simple, I used old fashion oats, lemon cake mix { that’s why I said “healthier”!}, shredded coconut, honey, vanilla, and for fun I SPRINKLED in some left over springtime morsels from when I made my Frosted Lemon Bars a couple weeks ago. And lastly, I drizzled some yellow candy melts on top for an easy, fun and delicious snack for spring and summer time!

Lemon Coconut Granola Bites

Yield: 18 Granola Bites

Total Time: 10 Minutes

Ingredients:

  • 2 1/2 cups Old Fashioned Oats
  • 1 cup lemon cake mix ( I used Duncan Hines Signature Lemon Supreme Cake Mix)
  • 1 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut
  • pinch of salt
  • 1/4 cup chocolate morsels
  • yellow candy melts, for drizzle

Directions:

Line baking sheet with parchment paper or silicone baking mat. Set aside.

In a large bowl, mix old fashioned oats, lemon cake mix, honey, vanilla, coconut, salt, and chocolate morsels. Stir until well combined.

Using a cookie scoop, scoop granola mixture onto prepared baking sheet. Place baking sheet in freezer for 10 minutes (this helps the granola mixture settle to make it easier to roll them into balls). Remove from freezer and shape granola balls by using your hands to roll them into bite size balls.

In a small microwavable bowl, melt yellow candy melts in microwave for 30 seconds. Stir until smooth. Pour melted candy melts into a piping bag or storage baggy, cut small tip at bottom of piping bag. Drizzle over top of granola bites.

        Jenn, Thanks so much for your quick little snacks. Pics and Directions Great! I am a Gramdma and I think it is so great for a young cook to take this time to share with others, I am going to try the Frozen Bananas.
