Cranberry Chocolate Biscotti
Thanksgiving is over and now it’s time to think about all the gifts you have to get for your friends and family!
In my opinion, there is nothing better than a homemade gift. This Cranberry Chocolate Biscotti would make a perfect gift, they are full of chocolate flavor and the cranberries add a delicious flavor perfect for the holiday season. And biscotti dipped in white chocolate is the BEST!
JUST A FEW BAKING TIPS:
✓ DRIED CRANBERRIES: I used dried cranberries, but you could also use dried cherries or even raisins.
✓ DIP IN CHOCOLATE: I love my biscotti dipped in white chocolate, but you could use dark or semisweet chocolate too!
✓ MAKE AHEAD: Biscotti freeze wonderfully! I usually have several different kinds in my freezer all the time, and they last for several months in a ziplock bag. Once you are ready to serve them or use them as a gift, leave them at room temp for just an hour or two, they’ll defrost just fine. You can also re-crisp them at 350 for 5-10 minutes if you think they’ve gotten a bit soft.
STEP-BY-STEP GUIDE ON HOW TO MAKE THIS CRANBERRY CHOCOLATE BISCOTTI:
LET COOL FOR 1 HOUR & THEN FOLLOW THE STEPS BELOW:
- 1/4 cup salted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1 2/3 cups all-purpose flour
- 1/3 cup chopped dried cranberries
- 1 cup white chocolate baking bars
PRE-STEP: Preheat oven to 375F degrees. Line 1 baking sheets with foil or silicone baking mat.
STEP 1: In a large bowl beat butter with a mixer on medium for 30 seconds.
STEP 2: Add sugar, cocoa powder, baking powder, and baking soda.
STEP 3: Beat in eggs and vanilla extract.
STEP 4: Beat in flour.
STEP 5: Stir in cranberries.
STEP 6: Divide dough in half. Shape each portion into an 8-inch roll. Place rolls 3 inches apart on prepared cookie sheet; flatten until about 2 inches wide. Bake 18-20 minutes or until firm and a toothpick comes out clean. Cool on cookie sheet for 1 hour.
STEP 7: Preheat over to 325F degrees. Using a serrated knife, cut loaves diagonally into 1/2-inch slices. Bake for 10 minutes. Turn slices over and bake for 8-10 minutes or until crisp. Let cool.
STEP 8: Microwave chocolate for 1-2 minutes or until melted and smooth. Dip one end of each biscotti into melted chocolate.
